Saturday, May 31, 2025: Hawker Chan

Chef Chan’s culinary journey began with preparing daily family meals, sparking his passion for cooking. At 15, he left school and his hometown for Singapore, where he apprenticed under a Hong Kong chef and perfected his soya sauce chicken recipe.

In 2009, he founded Liao Fan Soya Sauce Chicken Rice & Noodle at Chinatown Complex Food Centre. His stall earned a Michelin star in 2016, making it the world’s first Michelin-starred hawker meal and the most affordable Michelin-starred dish.

Later that year, a partnership with Hersing Culinary rebranded his hawker stall into Hawker Chan, a quick-service restaurant. Today, Hawker Chan has expanded globally, with over 30 locations across 11 countries.

Saturday, Jun 28, 2025: 328 Katong Laksa

The Original Katong Laksa, famously known as Janggut Laksa, was founded by Mr. Ng Juat Swee. In the 1940s, he began his journey by balancing metal buckets of laksa over his shoulders, walking the Marine Parade beach area to serve what would become a beloved Singaporean icon.

Katong Laksa is renowned for its rich, coconut milk-based broth infused with a fragrant blend of spices, including lemongrass, galangal, and chili. This iconic dish typically features rice noodles, bean sprouts, prawns, fish cakes, and fresh cockles.
